Farmer’s Table is on Forest Street in New Canaan, and its kitchen statement is more specific than most: ingredients from sources it can name, grown or raised where possible, everything made to order — and, stated plainly, no steam tables and no microwaves in the kitchen.
That last detail is the useful one. Plenty of restaurants describe their sourcing; rather fewer tell you what equipment they refuse to own. It is a claim you can check by eating there, which is more than most kitchen philosophy survives.
They also state a preference against over-refined ingredients, unnecessary additives and excessive packaging.
